Mexican quinoa wrap

Serve in lettuce wraps or as a salad if you want a lower-carb option

·         225g (8oz) cooked quinoa

·         400g tin kidney beans, drained

·         198g tin sweetcorn, drained

·         1tbsp chipotle paste

·         Juice of ½ lime

·         300g (11oz) cooked chicken

·         2 spring onions

·         Large handful fresh coriander

·         4tbsp tomato salsa

·         4tbsp guacamole, plus extra to serve

·         4tbsp sour cream, plus extra to serve

·         8 corn tortillas

1.    In a large bowl mix together the quinoa, kidney beans and sweetcorn with the chipotle paste and lime juice. Roughly chop the chicken, spring onions and coriander and add to the quinoa mix. Stir through the salsa and season to taste.

2.    Spread a little guacamole and sour cream in the middle of each tortilla (you can heat the tortillas in a microwave for 30sec before assembly, if you like) and top with one eighth of the quinoa mixture. Serve with extra salsa and guacamole.

Per serving 617cals, 11g fat (1g saturates), 86g carbs (7g total sugars), 40g protein, 8g fiber (without guacamole or sour cream)
