Double Chocolate Chip and Oatmeal Cookies

Ingredients

·         1½ cups plain flour

·         1 cup rolled oats

·         ½ teaspoon sea salt

·         ½ teaspoon baking soda

·         ½ teaspoon ground allspice

·         ¾ cup each white and dark chocolate buttons

·         ¾ cup melted butter

·         1 cup brown sugar

·         ¼ cup caster sugar

·         2 eggs

·         1 teaspoon vanilla extract

Recipe

1.    Preheat the oven to 170˚C.

2.    Combine the flour, oats, salt, baking soda, allspice and the chocolate in a large bowl.

3.    Combine the butter and sugar in another bowl then whisk in the vanilla extract and the eggs.

4.    Pour into the dry ingredients and stir to combine well. The dough is soft and can’t be rolled out.

5.    Place tablespoons of the dough on lined baking trays about 5 cm apart, giving them plenty of room to spread and flatten with the back of a fork.

6.    Bake in batches, for 8-10 minutes until golden.

7.    Leave on the tray for 5 minutes then transfer to a cooling rack.
