Spinach & Sausage Penne

Serves 4 prep 10 minutes cook 15 minutes

Nutrition 2440kj; 26g fat (11g sat); 25g protein; 58g carbohydrate; 3g fibre a serve Cost $3.50 a serve

·         300g penne pasta

·         4 thin lamb sausages

·         Cooking oil spray

·         1 onion, finely chopped

·         2 cloves garlic, crushed

·         1 cup reduced-fat thickened cream

·         cup sun-dried tomato tapenade

·         100g baby spinach leaves

Cook pasta in a large saucepan of boiling salted water for 10 minutes or until tender; drain.

Meanwhile, spray sausages with oil. Heat a large frying pan over moderate heat. Cook and turn sausages for 5 minutes or until browned and cooked. Transfer to a chopping board. Slice.

Add onion to pan; cook and stir for 2 minutes or until soft. Add garlic; cook and stir for 1 minute or until fragrant. Stir in cream and tapenade. Bring to the boil. Add pasta, sausage and spinach. Cook and stir for 2 minutes or until mixture is heated. Serve.
