Baked Tomato Chicken Drumsticks

Baked Tomato Chicken Drumsticks

Serves 4 prep 5 minutes cook 25 minutes

Nutrition 1858kJ; 19g fat (5.5g sat); 39g protein; 28g carbohydrate; 7g fibre a serve COST $3.20 a serve

·         8 chicken drumsticks

·         Cooking oil spray

·         8 chat (baby) potatoes, halved

·         2 x 425g cans diced tomatoes

·         1 large chicken stock cube

·         250g packet frozen chopped spinach, thawed

·         400g can cannellini beans, rinsed

·         ¼ cup chopped flat-leaf parsley

·         1 tablespoon finely grated lemon zest

Preheat the oven to 200°C/180°C fan-forced. Spray chicken with oil. Heat a 2.5-litre (10-cup) flameproof ovenproof dish over moderate heat. Cook and turn the chicken and potato on the stovetop for 5 minutes or until browned. Transfer the chicken to a heatproof plate. Add tomatoes, crumbled stock cube and 1½ cups water. Bring to the boil, stirring. Return the chicken to dish. Bake, covered, for 15 minutes.

Using hands, squeeze excess liquid from the spinach. Add spinach and beans to the chicken mixture; stir to combine. Bake for a further 5 minutes or until the chicken is cooked. Serve chicken sprinkled with parsley and zest.
