Serves 4 prep 10 minutes Cook 20 minutes

Nutrition 3358kJ; 37.5g fat (18g sat); 43g protein; 67g carbohydrate; 11g fibre a serve COST $3.50 a serve

·         400g ready-made beef meatballs

·         35g sachet taco seasoning mix

·         1 cups plain flour

·         2 teaspoons (7g) dried yeast

·         1 teaspoon white sugar

·         1 teaspoon olive oil

·         ½ x 425g can diced tomatoes

·         420g can red kidney beans, rinsed

·         cup reduced-fat tasty cheese

·         2 tomatoes, chopped

·         ½ avocado, chopped

·         ½ cup extra-light sour cream

·         2 green onions, chopped

Heat a 24cm (base measurement) frying pan over moderate heat. Cook and turn meatballs for 5 minutes. Sprinkle with taco seasoning; cook and turn for a further 1 minute or until browned. Transfer to a heatproof plate.

Combine flour, yeast, sugar and a pinch of salt in a bowl. Make a well at centre. Add ¾ cup warm water; mix well. Turn dough out onto a lightly floured work surface; knead until smooth. Roll out to a 25cm disc.

Add oil to pan. Place dough in pan to cover base. Cook, covered, for 5 minutes or until golden underneath.

Preheat an oven-grill to high. Spread base with canned tomatoes. Top with beans, meatballs and cheese. Grill for 5 minutes or until cheese melts. Serve topped with tomato, avocado, sour cream and onion.
