Rendang Beef Noodles

Serves 4 prep 10 minutes Cook 10 minutes

Nutrition 1643kJ; 18g fat (7g sat); 31g protein; 26g carbohydrate; 4g fibre a serve Cost $3.50 a serve

·         200g packet dried rice stick noodles

·         120g green beans, cut into 3cm lengths

·         400g beef mince

·         cup rendang curry paste

·         10 Brussels sprouts, shredded

·         1 large carrot, cut into matchsticks

·         1 cup bean sprouts

·         ½ cup coriander sprigs

Soak noodles and beans in boiling water in a large heatproof bowl for 5 minutes. Stir to separate strands. Drain. Using scissors, snip noodles into short lengths.

Meanwhile, heat a wok or frying pan over moderately high heat. Stir-fry mince for 5 minutes or until browned. Add curry paste; stir-fry for 1 minute or until fragrant. Add Brussels sprouts; stir-fry for 2 minutes or until wilted.

Add noodles, beans and carrot to mince mixture; stir-fry for 2 minutes or until heated and combined. Remove from heat. Serve topped with bean sprouts and coriander.
