Perfect Crumb-Topped Coffeecake

Classic coffeecake, reinvented! Less fat, less sugar, but all the moist flavor you love. Bake as suggested or add fruit, chocolate chips, or citrus zest to the batter.

INGREDIENTS | SERVES 16

14 cup brown sugar

3 tablespoons unbleached all-purpose flour

12 teaspoon ground cinnamon

5 tablespoons unsalted butter, divided

2⁄3 cup sugar

12 cup low-fat vanilla yogurt

1 egg white

1 teaspoon pure vanilla extract

2 teaspoons sodium-free baking powder

12 teaspoon sodium-free baking soda

112 cups unbleached all-purpose flour

2 tablespoons low-fat milk

Sodium-Free Baking Soda

Standard baking soda contains over 1,200 mg of sodium per teaspoon, and is not recommended for those on a DASH diet. Ener-G sodium-free baking soda substitute is an effective replacement for standard baking soda. In addition to being sodium free, it’s also free of aluminum and gluten. Ener-G sodium-free baking soda substitute is sold online.

  1. Preheat oven to 350°F. Lightly grease and flour an 8-inch square baking pan and set aside.

  2. To make the crumb topping, mix together the brown sugar, 3 tablespoons flour, and ground cinnamon. Cut 1 tablespoon butter into the mixture until it becomes crumbly. Set aside.

  3. Beat the remaining 4 tablespoons butter with the sugar. Add the yogurt, egg white, and vanilla and mix until smooth.

  4. Add the baking powder and soda, then gradually add in the flour. Stir in the milk.

  5. Spread batter in the prepared pan. Sprinkle the crumb topping evenly over the batter.

  6. Place pan on middle rack in oven and bake for 30 minutes. Remove from oven and set on wire rack to cool briefly before cutting into slices and serving.
