DASH Diet : Breakfasts - Coconut Rice with Dried Apricots and Mint (part 1) - Hot Honey Porridge

This sweet rice makes a scrumptious hot alternative to oatmeal. Omit the agave nectar if you prefer it less sweet. Try adding chopped nuts and serving as a side dish with a later meal.

INGREDIENTS | SERVES 4

34 cup light coconut milk

14 cup water

12 cup basmati rice, rinsed well

1 tablespoon agave nectar (optional)

1⁄3 cup dried apricots, diced

1⁄8 teaspoon ground cardamom

1 tablespoon chopped fresh mint

What Is Agave Nectar?

Agave nectar is a liquid sweetener derived from the agave cactus. It’s a clear, light brown liquid, similar in look to maple syrup, though slightly thicker. It has a subtle pleasant flavor, and is very sweet, about twice as sweet as cane sugar. Because of its liquid form, it dissolves instantly, making it a great choice for sweetening beverages and dressings. Unlike honey, agave nectar is a strictly vegan food.

  1. Combine the coconut milk and water in a 3-quart saucepan. Bring to a boil over high heat.

  2. Once boiling, add the rice, reduce heat to low, cover, and simmer for 15 minutes.

  3. Remove pot from heat. Stir in the agave nectar, dried apricots, cardamom, and mint. Serve immediately.

Hot Honey Porridge

Warm and filling, this healthy multigrain cereal has a soft honey taste and a creamy, slightly chewy texture. Add dried fruit or chopped nuts if desired.

INGREDIENTS | SERVES 4

34 cup bulgur wheat

12 cup rolled oats

3 cups boiling water

14 cup honey

  1. Place the bulgur and oats into a saucepan. Add the boiling water and stir to combine.

  2. Place pan over high heat and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 10 minutes, stirring occasionally.

  3. Remove from heat, stir in honey, and serve immediately.
