Delicious Meals In 30 Minutes (part 4) - Easy Peasy Prawn Risotto

Easy Peasy Prawn Risotto

Ingredients

·         350g Gallo Risotto Pronto Quatro Formaggi (four cheeses); or 350g Gallo Risotto expresso Quatro Formaggi

·         200g raw king prawn tails

·         200g frozen peas

·         50g Parmesan, grated

·         50g rocket (optional)

Recipe

·         Put 900ml boiling water into a large pan, tip in the rice and cook according to packet instructions (12 mins for the Risotto Pronto; 2 mins for the Risotto Expresso).

·         Add the prawns and peas and cook for a further 5 mins until the rice is tender, most of the liquid is absorbed and the prawns are pink.

·         Serve sprinkled with grated Parmesan and a handful of rocket, if you like.

All the liquid goes in with the risotto rice and the result is super-creamy and quick!
