Spaghettini with Garlic & Olive Oil

Ingredients

·         Salt and freshly ground black pepper

·         400g spaghettini

·         12tbsp extra virgin olive oil

·         3 garlic cloves, peeled and lightly crushed

·         2tbsp chopped fresh fat-leaf parsley

Recipe

·         Bring a large saucepan of salted water to a rolling boil. Add the pasta and stir. Cover and return to the boil, but remove the lid as soon as the water has returned to the boil.

·         While the pasta is boiling, heat the oil and garlic together until the garlic goes completely black. Discard the garlic and keep the oil hot. Timing is quite crucial, as you don’t want the oil to burn, yet it must be hot.

·         Drain the pasta and return to the hot pan, pour over the oil and mix together thoroughly. Stir in the parsley. Transfer to a warm platter and serve immediately.
