Cucumber salad

·         Serves 4 

·         Prep 10 mins 

·         No cook

Ingredient

·         50g/2oz sesame seeds

·         1 tbsp sugar

·         2 tbsp dark soy sauce

·         3 tbsp dashi

·         1 large cucumber

Recipe

1.    Toast the sesame seeds in a dry pan until golden, then crush 40g with the sugar using a pestle and mortar. Mix well with the soy sauce and dashi until you have a smooth dressing.

2.    Cut the cucumber down the centre lengthways. Using a teaspoon, remove and discard the seeds. Cut into batons about 6cm long. Stir the dressing through, then sprinkle with the remaining sesame seeds.

Tips

·         Make the sesame seed dressing for the cucumber salad the day before.

·         Marinate the chicken the night before
