Serves two

Description: Berry and apple cinnamon bake

Berry and apple cinnamon bake

Ingredients

·         225g berries. Use fresh or frozen raspberries, blueberries, cranberries, strawberries or cherries; cut and discard pit if using cherries, and remove leaves and cut strawberries in half

·         2 apples, cored and chopped

·         3 tbsp golden raisins

·         1 tsp cinnamon or more to taste

·         ½ tsp nutmeg

·         Coconut oil

Directions

1.    Lightly coat dish with coconut oil.

2.    Place all the mixed ingredients into an oven-safe baking dish and cover.

3.    Bake at 190°C/gas mark 5 for 45 minutes or until apples are soft. Cool and enjoy!

Serves one

Description: Island green smoothie

Island green smoothie

Ingredients

·         1 mango, peeled, chopped and pit removed

·         Or 1 cup frozen mango and omit the ice cubes

·         1 banana, peeled

·         ½ avocado, peeled and pit removed. Save the other half for your salad, see page 33.

·         1 handful spinach

·         125ml coconut water

·         Ice cubes, optional

Directions

1.    Wash the spinach.

2.    Place everything in a blender and blend until smooth. Enjoy!
