13. Maple Date Carrot Cake

With applesauce for moisture and just a touch of oil, this is a cake you can feel good about eating for breakfast. Leave out the dates if you want even less natural sugar.

SERVES 8

112 cups raisins

113 cups pineapple juice

6 dates, diced

214 cups grated carrot

12 cup maple syrup

14 cup applesauce

2 tablespoons oil

3 cups flour

112 teaspoons baking soda

12 teaspoon salt

1 teaspoon cinnamon

12 teaspoon allspice or nutmeg

Egg replacer for 2 eggs

1. Preheat oven to 375°F; grease and flour a cake pan.

2. Combine the raisins with pineapple juice; allow to sit for 5–10 minutes to soften.

3. In a separate small bowl, cover the dates with water until soft, about 10 minutes. Drain water.

4. In a large mixing bowl, combine the raisins and pineapple juice, carrot, maple syrup, applesauce, oil, and dates.

5. In a separate large bowl, combine the flour, baking soda, salt, cinnamon, and allspice.

6. Combine the dry ingredients with the wet ingredients; add prepared egg replacer. Mix well.

7. Pour batter into prepared cake pan; bake for 30 minutes, or until a toothpick inserted in the center comes out clean.

14. Sweetheart Raspberry Lemon Cupcakes

Add 12 teaspoon of lemon extract for extra lemony goodness in these sweet and tart cupcakes. Or omit the raspberries and add 3 tablespoons of poppy seeds for lemon poppy seed cupcakes. These sweets are amazing any way you cut it!

YIELDS 18 CUPCAKES

12 cup vegan margarine, softened

1 cup sugar

12 teaspoon vanilla

23 cup fortified soymilk

3 tablespoons lemon juice

Zest from 2 lemons

134 cups flour

112 teaspoons baking powder

12 teaspoon baking soda

14 teaspoon salt

34 cup diced raspberries, fresh or frozen

Zinc: only present in very small amounts

Calcium:

Vitamin D: only present in very small amounts

1. Preheat oven to 350°F; grease or line a cupcake tin.

2. Beat together the margarine and sugar until light and fluffy.

3. Add vanilla, soymilk, lemon juice, and zest.

4. In a separate bowl, sift together the flour, baking powder, baking soda, and salt.

5. Combine flour mixture with wet ingredients just until mixed; do not overmix.

6. Gently fold in diced raspberries.

7. Fill cupcakes about two-thirds full with batter; bake immediately for 16–18 minutes, or until done.

Raspberry Cream Cheese Frosting

Combine half an 8-ounce container of vegan cream cheese with 12 cup raspberry jam and 6 tablespoons of softened vegan margarine. Beat until smooth, then add powdered sugar until a creamy frosting forms. You’ll need about 212 cups. Pile it high and garnish your cupcakes with fresh strawberry slices or pink vegan candies.
