Perfect Recipe For Healthy People (Part 3) - Rosemary breadsticks

Rosemary breadsticks

·         Makes 12-14

·         Ready in 30 mins, plus 1hr30 resting

Ingredient

·         180ml lukewarm water

·         1 tsp quick dry yeast

·         ½ tsp agave syrup

·         300g gluten-free plain flour of choice, plus extra for dusting

·         3 tsp xanthan gum

·         1½ tsp sea salt

·         Rosemary leaves, chopped

·         2 tbsp extra virgin olive oil

Recipe

·         Put the warm water and yeast in a large bowl and mix until the yeast has dissolved. Stir in the agave syrup – this small amount of sweetness helps feed the yeast, which is crucial in making the dough rise. Allow it to rest for approximately five minutes.

·         Separately, sift together the flour, xanthan gum and salt.

·         Add the olive oil to the yeast mixture, then sift the dry ingredients into it, stirring well to avoid any lumps. Add the rosemary and make sure it is well incorporated. You should see a big ball of dough starting to form.

·         Dust a surface with flour and place the dough ball on it. Knead the dough for 10 minutes. Flour your surface generously as you go along. You want to gently stretch the dough with your hands and fold it over itself, and repeat this action in different directions.

·         Roll the dough with a rolling pin into a rough circle about 30cm wide. Make sure the surface is nice and flat. Cover the dough tightly with clingfilm, followed by a damp dish towel, and let it sit for about 90 minutes.

·         About 15 minutes before you are ready to bake the sticks, preheat the oven to 200C/400F/Gas 6. Uncover the dough; it should have risen to double in height. Cut it in half, then cut each half into four long slices so you have eight strips. The strips on the outer ends of the circle should be a perfect length for breadsticks. Roll each strip out with your hands to lengthen and thin it to your preferred size. Gently twist the sticks and place them on the prepared baking sheets.

·         Place one baking sheet on the top rack and the other on the middle rack of the preheated oven and bake for 15 minutes. Swap the sheets around and bake for another 10 minutes.
