Cheese Paprika Croutons

Serves 4 Prep 15 minutes

Cook 10 minutes Cost $1.95 a serve

·         150g fresh ricotta

·         60g mild blue cheese

·         cup grated gruyere cheese, plus cup extra

·         1 teaspoon smoked paprika

·         30cm breadstick (baguette), cut into 12 slices diagonally

·         ¼ cup tomato chutney

·         Small thyme sprigs, to garnish

Preheat the oven to 200°C/180°C fan-forced. Line a baking tray with baking paper.

Combine cheeses and paprika in a bowl. Top bread slices with cheese mixture. Place on prepared tray; sprinkle with extra gruyère cheese. Bake for 10 minutes or until golden. Serve with chutney and thyme.

Parsnip & Leek Soup

·         Heat 1 tablespoon olive oil in a large saucepan over moderate heat. Add 2 sliced leeks, pale section only, and 1 clove crushed garlic; cook and stir for 5 minutes.

·         Add 300g chopped potatoes, 400g chopped parsnips, 2 crumbled large chicken stock cubes and 4 cups water. Bring to the boil. Reduce heat; simmer for 15 minutes or until potato is tender. Cool for 5 minutes. Using a stick blender, blend until smooth.

·         Stir in ½ cup cream. Cook and stir over low heat until hot. Stir in 2 tablespoons chopped chives and season. Serve.
