A healing, spicy chicken soup perfect for alleviating colds

Spicy chicken soup
Serves: 4
Ingredients

1 onion, chopped
·
1 stick celery, chopped
·
1 carrot, chopped
·
1 red pepper, chopped
·
1 leek, chopped
·
1 fresh red chili, finely chopped
·
2cm fresh ginger
·
Four to six garlic cloves, crushed
·
1 skinless, boneless chicken breast
·
1 tbsp pearl barley
·
1 tsp ground turmeric
·
1l chicken stock
·
Soy sauce
·
Fresh herbs such as thyme to garnish

Fry onion in a dash of vegetable oil for five minutes. Add celery,
carrot, red pepper, leek, a small red chili, the fresh ginger and garlic to a
pan.

Slice a skinless, boneless chicken breast into pieces and combine.

Spoon in the pearl barley, sprinkle with turmeric and pour in chicken
stock. Mix well and simmer for 25 minutes.

Finish with soy sauce and fresh herbs.
