Kale, sausage and white bean soup

Description: Kale, sausage and white bean soup

Kale, sausage and white bean soup

·         1 tbsp extra virgin olive oil

·         1 red onion, chopped

·         4 garlic cloves, sliced

·         280g packed chopped kale

·         1.8 liters chicken broth

·         420g canned cannellini beans, rinsed

·         1 tbsp fresh rosemary leaves, chopped

·         ½ tsp fennel seeds

·         50g Parmesan cheese, grated

 

1.    Place the sausage in a large saucepan over medium heat; drizzle with the olive oil and toss to combine.

2.    Increase the heat to high and cook, stirring, until browned, for about four minutes. Add the onion and cook for three to four minutes, until it starts to soften.

3.    Tip in the garlic and cook, stirring often, until fragrant, for about one minute. Toss in the kale and stir to combine.

4.    Add the chicken broth and bring the 4 mixture to a boil. Reduce the heat to low, cover and simmer for 15 to 17 minutes, until the liquid has slightly reduced and the broth is flavored by the sausage.

5.    Add the beans, rosemary and fennel seeds and stir to combine. Cook ‘or one to two minutes to warm the beans. Serve immediately sprinkled with cheese.

Blueberry Kale smoothie

·         150g frozen blueberries

·         125m1 whole milk

·         15g chopped kale

·         1 tbsp honey or agave nectar

·         ½ tsp vanilla extract

·         4 ice cubes

Place all the ingredients in a blender and blend until smooth. Serve Immediately.
