Arugula, watermelon & feta salad

Just because it’s a salad, doesn’t mean it has to be uninspiring! This refreshing salad combo screams summer and doesn’t have a drop of dressing

·         Total time: 10 min

·         Makes 5 servings

Ingredient

·         7 cups arugula

·         2 cups raw nuts, chopped

·         ½ medium watermelon

·         1/3 cup feta cheese

·         1 yellow pepper, chopped

Recipe

·         Make right before serving so the arugula stays crisp. Remove the rind from the watermelon and cut flesh into bite-sized cubes, removing the black seeds.

·         Place all ingredients in a large bowl and mix gently. Serve immediately.
